Let's be precise about what Odoo is for in healthcare, because most vendors are vague here. Odoo is not a certified electronic health record, it does not replace Epic, Cerner (Oracle Health), athenahealth, or eClinicalWorks, and it should not hold the legal medical record. What Odoo does is run the operational and financial business of a healthcare organization, the part that EHRs handle poorly or not at all.

That covers a lot: medical-supply and pharmaceutical inventory with lot tracking and expiration-date control across multiple sites; procurement and vendor management with approval workflows; biomedical-equipment and asset maintenance schedules; multi-entity, multi-location finance and consolidation; HR, credentialing-adjacent records, and payroll inputs; and patient or payer billing and receivables where it sits outside the clinical system. For provider groups, DME suppliers, diagnostic labs, dental and veterinary groups, home-health agencies, and medical-device companies, this is the system that's usually a patchwork of QuickBooks plus spreadsheets plus a standalone inventory tool.

HIPAA is handled honestly. Odoo S.A. does not sign a BAA, so PHI must be designed for deliberately: we deploy on a HIPAA-eligible cloud (AWS / Azure) under a signed BAA with the hosting provider, enforce role-based access and record rules, enable full audit logging, encrypt in transit and at rest, and minimize PHI in Odoo to what the operational workflow actually requires. The ISO 27001 information-security discipline behind our delivery, the same that passed external national-government audit, is what makes this credible rather than a checkbox.
