Do we have to use every app?

Can Zoho One replace Salesforce?
For most US services companies with 25-500 employees, yes — at a fraction of the cost. For Salesforce-anchored enterprises with deep AppExchange dependencies, specialist CPQ setups, or heavy marketing cloud usage, migration is more involved.
